Spiced Pork Tenderloin with Honey Mustard

Tenderloins coated in dry mix of coarse salt, fresh ground black pepper, mustard seed, fennel seed, and crushed red pepper. Pork is roasted until golden brown outside and cooked through, and served with a honey mustard sauce.

Ingredients -
3 tablespoons Mustard Seeds
1 tablespoon Fennel Seeds
1/2 teaspoon Crushed Red Pepper
2 Pork Tenderloins, (14 to 16 ounces), trimmed
Salt and Fresh Ground Black Pepper, to taste
1/2 cup Grainy Dijon Mustard
1/4 cup Traditional Dijon Mustard
1/4 cup Honey
 
Preparation:

1. Preheat the oven to 375 degrees.

2. In a mortar, coarsely crush the mustard and fennel seeds with the crushed red pepper.

3. Place tenderloins on a rimmed baking sheet lightly coated with non-stick spray.

4. Season each with salt and pepper and scatter crushed spices on the baking sheet and roll tenderloins in them to coat.

5. Place pan into the oven and bake until an instant-read thermometer placed in the thickest part of each tenderloin reads about 140 to 145 degrees F, about 18 to 22 minutes.

6. Remove from the oven and transfer tenderloins to a cutting board and let rest for 10 minutes.

7. Meanwhile, in a small bowl, whisk together mustards and honey and season with salt and pepper.

8. Slice pork and serve with the honey mustard.

Ensuring Doneness

When pricked, juices from a piece of pork that is done will run clear. Cut into a piece of the pork to ensure that it is white in color. There may be slight trace of pink for pork that is cooked to medium doneness.
