Pork with Cranberry Pepper Relish

Pork medallions topped with cranberry orange relish embellished with green onion, chopped jalapeno pepper.

Ingredients -
1 (1 pound) Pork Tenderloin, cut into 1/2 inch thick slices
1 teaspoon Cooking Oil
1/4 cup sliced Green Onion
1 (10 ounces) package Frozen Cranberry Orange Relish, thawed
2 teaspoons bottled chopped Green Jalapeno Peppers
 
Preparation:

1. Cook the tenderloin slices in hot oil until no longer pink in the middle which takes about 5 to 6 minutes, turning once.

2. Remove the pork from the skillet and set to the side, keeping warm.

3. Add the green onion slices to the drippings and saute until soft.

4. Add the cranberry relish and jalapeno peppers.

5. Stir to combine.

6. Cook until warm.

7. Pour the relish mixture over the pork.

8. Serve.
