1. Preheat the oven to 325 degrees.
2. Flatten the pork slices with a mallet and set to the side.
3. In a small shallow dish, combine the egg and water.
4. In another shallow dish, add the crushed crackers.
5. Dip the meat in the egg mixture then the crackers, turning to evenly coat.
6. Add the butter to a medium skillet and melt.
7. Add the pork and cook until golden brown on both sides.
8. Remove the pork from the skillet and arrange them in the bottom of a 2 quart baking dish.
9. Combine the rest of the ingredients except for the noodles and parsley and pour the mixture over the browned tenderloin slices.
10. Cover with foil and bake for 1 hour.
11. Serve the pork and sauce over noodles.
12. Sprinkle with chopped parsley.
