Pork Stir Fry with Broccoli, Bell Pepper, and Onion

Sliced pork tenderloin stir-fried with broccoli, bell pepper, onion and cabbage mix topped with a sauce featureing oyster sauce, gingerroot and garlic.

Ingredients -
2/3 cup Chicken Broth
1/4 cup Oyster Sauce
1 teaspoon chopped Fresh Gingerroot
1 teaspoon chopped Fresh Garlic
1 tablespoon Vegetable Oil
2 cups Broccoli Florets
1/2 Red Bell Pepper, seeded and sliced
1 White Onion, cut into wedges
2 tablespoons Cold Water
1 tablespoon Vegetable Oil
1/4 pound Boneless Pork Tenderloin, sliced
2 cups Coleslaw Mix
 
Preparation:

1. Whisk together the broth and oyster sauce in a small bowl and set aside.

2. Add the next three ingredients to a skillet and cook for 30 seconds.

3. Add the vegetables and water and cook for 3 minutes.

4. Remove the vegetables from the skillet, add 1 tablespoon of vegetable oil and cook for 15 seconds.

5. Add the remaining ingredients and cook for 2 minutes or until heated through.

6. Return the vegetables and broth mixture to the skillet and cook for 2 minutes or until the sauce starts to thicken.

7. Serve with rice.

Coleslaw mix can be found in most supermarkets. Homemade coleslaw is a perfect substitute. Do not add any liquid ingredients to your chopped coleslaw vegetables.
