Orange and Chipotle Pork Kabobs

Pork marinated in fresh orange juice, light brown sugar, minced garlic, minced chipotle pepper, kosher salt and vegetable oil. Pork skewered with onion and orange slices; grilled until cooked through.

Ingredients -
1 cup Orange Juice
2 tablespoons Light Brown Sugar
4 Garlic Cloves, minced
3 Chipotle Peppers in Adobo, seeds removed, peppers minced
1/2 teaspoon Kosher Salt
2 tablespoons Vegetable Oil
1-1/2 Pounds Pork Tenderloin, silver skin removed, cut into 1" pieces
1 small White Onion
1 Orange
 
Preparation:

1. Whisk together the OJ, brown sugar, garlic, chipotle peppers, salt and oil.

2. Toss the meat in the marinade.

3. Cover and refrigerate in a dish, 3 hours or overnight.

4. Heat grill.

5. Cut onion and orange into 1" pieces.

6. Discard marinade and thread meat, onions and oranges onto skewers.

7. Oil grill grates and cook kabobs, turning until meat is done, then serve.

Keep Meat from Sticking to the Grill

To prevent meat from sticking to the grill grate, always clean the rack thoroughly and coat with a nonstick cooking spray or rub with vegetable oil.

Cutting for Kabobs

When cutting for pork for kabobs cut the pork in cubes and then butterfly each cube to the center. The cut allows the kabob to absorb any marinade better and will cook a little faster on the grill.
