Barbecue Pork Tenderloins

Seasoned pork placed on top of chopped vegetables and baked until pork is cooked through. Tenderloin medallions served with barbecue sauce.

Ingredients -
2 Pork Tenderloins
1 medium White Onion, chopped
2 Celery Stalks, chopped
1 Garlic Clove, chopped
2 tablespoons Vegetable Oil
2 tablespoons Worcestershire Sauce
Coarse Salt
Fresh Ground Black Pepper, to taste
1 cup Water
Barbecue Sauce
 
Preparation:

1. Preheat the oven to 400 degrees.

2. Season all sides of the pork tenderloins with salt and pepper to taste.

3. Place half of the chopped vegetables in the bottom of a baking pan.

4. Add 1 tablespoon vegetable oil and 1 cup of water to the pan.

5. Place the pork on top of the vegetables and top with Worcestershire sauce.

6. Bake, uncovered, for 15 minutes.

7. Reduce the temperature to 350 degrees, cover and cook for 2 more hours.

8. Slice and serve with barbecue sauce.

 



Pork Tenderloin Tip –
Grill Marks

Grill vegetables ¼ of the cooking time recommended, lift and spin vegetables 45 degrees and place back on the grill. Cook another ¼ of the cooking time. Turn vegetables over on the grill and repeat process.

Grilling Vegetables

To prevent vegetables from drying out while grilling, soak them in cold water prior to placing them on the grill.
