Asian Style Pan Seared Pork Tenderloin

Tenderloin is marinated in mixture of soy sauce, orange juice, brown sugar, minced garlic, fresh ground black pepper and fresh thyme. After marinating for several hours the pork is seared in hot oil and butter, and then pan roasted to complete cooking. The pork is sliced and served with sauce prepared from reserved marinade.

Ingredients -
2 Pork Tenderloins
4 tablespoons Soy Sauce
1-1/2 cup Orange Juice
2 teaspoons Brown Sugar
1 Garlic Clove, minced
1/4 teaspoon Pepper
8 Fresh Thyme Sprigs
2 tablespoons Unsalted Butter
2 tablespoons Extra Virgin Olive Oil
 
Preparation:

1. Add soy sauce, orange juice, sugar, garlic, pepper and thyme to medium bowl. Stir to combine.

2. Reserve 1/2 the marinade and add remaining marinade to large self sealing plastic bag.

3. Add the tenderloins to the plastic bag, seal, and marinate for 2-4 hours.

4. Add unsalted butter and extra-virgin olive oil to large skillet.

5. Brown the tenderloins 3-4 minutes.

6. Cover and cook over medium heat until internal temperature reaches 150 degrees.

7. Remove and slice pork.

8. Add reserved marinade to saucepan and cook over medium until sauce reduced by 1/2.

9. Pour over sliced pork and serve immediately.

Unsalted butter has a higher burning point than regular salted butter, and is the preferred choice of chefs and home cooks as a result.

Extra virgin olive oil is the finest olive oil money can buy. Readily available, the highest quality oil can be quite pricey and should be used when the flavor of the oil is important to the finished product.
